Last week kicked my ass. Lucy has had a kind of dirty funk that has made its way through the house. The word dirty funk has made it impossible for him to breathe through his nose, and hence, it is impossible to sleep.
Which means I also don't sleep.
And it's not funny how when new children are born, you can go for days in two hours, but once you get your night back again, less than six hours of sleep really KILLS you?
I just didn't want to get up at 6 in the morning with a toddler climbing into my bed with a bunch of Shopkins, asking for chocolate milk and Mickey Mouse Clubhouse. There are hours that can be accepted for Shopkins and Mickey Mouse Clubhouse, and at 6 a.m. definitely not.
To brighten our mood around here, I decided to make a delightful cake that had been on my mind for several weeks.

Not only is it truly and truly adorable, but the taste is also very delicious! Three layers of pound cream sour cake, filled with chocolate chip cake frosting. As if that wasn't enough, I smeared it all with butterless butter and poured a soft ganache over it all. Cake decorations and a pair of Googley eyes are the final touch.

This cake makes everyone in the house smile SO BIG! It's fun to look at and even more fun to eat.
Monster Cake Cookies
material
Cake:
- 4 cups of cake flour
- 1/4 teaspoon of salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon of baking soda
- 3 sticks of salted butter, softened to room temperature
- 3 cups of sugar
- 8 large eggs
- 2 teaspoons of vanilla extract
- 1 cup of sour cream
Cookie Dough Frosting:
- 1 stick of salted butter, softened
- 3/4 cup of pink sugar
- 1 cup of refined sugar
- 1 teaspoon of vanilla
- 3 teaspoons of whipping cream
- 1/2 cup chocolate mini chips
Cookies and Cream Frosting:
- 1 stick of salted butter
- 1/2 teaspoon of vanilla
- 2 heavy whipping cream of FFB
- 2 cups of powdered sugar
- 6 Oreo cookies, crushed very smoothly
- Blue food coloring
Ganache:
- 1 cup of semi-sweet chocolate chips
- 1/2 cup thick cream
- 2 TBS of light corn syrup
Decoration / Eyes:
- Chocolate chip cookie
- Oreo Cookies
- 2 chocolate candy for eyes (I use jumbo M & Ms but Milk Duds can also be used)
- Lollipop sticks

Instructions
- Preheat oven to 350. Butter and flour three 8-inch round baking pans.
- In a medium bowl, mix flour, salt, baking powder, and baking soda.
- In your stand mixer bowl equipped with paddle attachments, shake the butter until it is light and smooth. Add sugar at low speed until smooth, rub the bowl as needed, about 3 minutes.
- Add eggs, 1 at a time, shake until blended. Add vanilla and shake until blended.
- With a mixer at low speed, add flour and sour cream to the mixture alternately, starting and ending with the flour mixture. Beat until smooth.
- Pour the mixture into the prepared pan. Bake for 25-30 minutes or until the toothpick inserted in the center comes out clean. Cool in a skillet for 5 minutes, then turn it on the wire rack until it is completely cool.
- To freeze and decorate more easily, wrap and chill the cake before continuing.
- Prepare frosting cookie dough: In your mixer bowl, shake the butter, brown sugar, and powdered sugar at medium speed until smooth and soft. Add vanilla extract and thick cream until mixed.
- Beat high for one minute, until it expands. Fold in chocolate chips.
- Cut and flatten the cake, then assemble and fill it with frosting cake mixture.
- Place it in the fridge.
- Prepare n'cream pastries: In a mixer bowl, beat butter, cream, and vanilla in medium-low heat until smooth and well combined.
- Add powdered sugar slowly. After the powder sugar is barely mixed, increase the speed to medium-high and shake for 2 minutes. Fold in a crushed Oreo. Add blue food coloring until the desired color is reached.
- Frost assembles the cake and places it in the fridge.
